I have been incredibly tired all day & for some reason, I kept just falling asleep while sat anywhere really, so dinner had to be easy, quick and stress free. Haddock & lemon cooked in the oven for 15 minutes at 170Cc (fan) and couscous with vegetables. For the couscous, I made according to package instructions. I then sautéed mushrooms and courgette (zucchini) in olive oil and then combined it with the couscous. I served with tortilla chips and white rice.
