Beef & Guinness

This is always my easy go to dish when I have no clue what to do & a few hours to wait for the meal to cook itself.

Ingredients:
about 500 grams (1 pound) chopped braising steak (into small pieces)
flour (5 tablespoons)
1 can of Guinness
1 chopped onion
1/2 cup hot water
olive oil
salt & pepper
(optional) any vegetables you might have. I used 3 large  potato, 5 carrots, 1 bell peppers & a few mushrooms

1. Season beef  and cover with flour and make sure beef is completely covered. I pour it all into a plastic bag & shake.
2. Heat oil in a large pot.
3. Brown beef on all sides and put aside. This might involve doing it in two or more lots. Beef should be completely browned - but not fully cooked.
4. Throw onions into the same pot and caramelize. You might need to add some oil. Add hot water and using a wooden spoon scrape any flour from bottom of pan off, but leave the scrapings in the pot. This is going to slow cook so you don't want it to be stuck to the bottom & burn but you need to keep in in there for flavor.
5. Throw beef back in pot with onions.
6. Add Guinness. Turn heat to medium-high and let bubble.
7. Once bubbling lower heat, cover and let cook for about 3 hours.
8. If you are adding vegetables, chop them and add after about 1.5 hours.
