Chicken Nuggets for the Kids


I don't give the girls chicken nuggets often, but when I do, I make my own to avoid preservatives and excessive oils.  Easy to do and they taste much better than store bought ones. I froze half of them and will give the girls the other half for dinner tomorrow, probably with rice and bok choy. yum.

Ingredients:
2 medium chicken breast
1 egg
10 ounces breadcrumbs
seasonings of your preference olive oil
1 large plastic freezer bag

Steps:
1. Heat over to 160 C (320 F)
2. Cut the chicken breasts into 10 strips. (about an inch in thickness but they should be longish).
3. Place the breadcrumbs in a plastic bag along with your seasonings of preference. I used salt, pepper, cayenne pepper and and Italian herb mixture.
4. Crack egg into a small bowl. Dip each chicken strip into the egg mixture to cover and then place dipped chicken strip into the bag with the breadcrumbs. Once all chicken strips are in the bag, close the bag and shake, making sure all chicken pieces are covered with the breadcrumbs.
5. Place chicken strips on a lightly oiled baking sheet. Drizzle with a bit of olive oil.
6. Place in oven for 7 minutes, then turn and bake for another 7 minutes.
7. Increase heat to 190 C (370 F) and bake for 3 minutes on each side to crisp breadcrumbs.

As always with chicken cut a strip at the thickest side to make sure it is cooked completely through. When working with chicken pieces it is always best to keep pieces to similar sizes to ensure equal cooking.
